Rinse and quarter or halve your potatoes into bite size pieces. Some of ours were so small I didn't have to bother with this step.

In a large bowl, combine potatoes with 1 can of artichoke hearts, drained and quartered.
Transfer to a roasting pan sprayed with non-stick cooking spray (makes for much easier clean-up)
Roast at 425 degrees for 40 min (or until potatoes are tender and starting to brown). I stirred mine once or twice while baking.
Before serving, stir in 4 oz. of crumbled feta cheese and it's ready to go.
Served here with grilled chicken and crusty French bread.
