Easy Summer Pasta


This dish is so easy to toss together and can be altered to include whatever fresh summer vegetables you happen to have on hand.



Ingredients:

fresh tomatoes
parmesan cheese (I prefer shaved)
uncooked pasta, any kind
lots of fresh basil
fresh vegetables (I'm using asparagus)
good olive oil - flavor-infused oils work great for this

Cook pasta in boiling, salted water until almost done - add chopped vegetables (asparagus) during last few minutes of cooking and cook until noodles and  vegetables are done.  Drain.  



In a large bowl, toss pasta mixture with olive oil, lots of fresh basil, and parmesan cheese.



Top with diced fresh tomatoes.
And enjoy a delicious, healthy dinner.

    1. Infused oils are oils with different flavorings in them. The one I used has red peppers, rosemary, and bay leaves in it. I also have a basil one that I use a lot. You can get them at some grocery stores, Whole Foods, or I actually have found some of mine at Home Goods.
