This dish is so easy to toss together and can be altered to include whatever fresh summer vegetables you happen to have on hand.
parmesan cheese (I prefer shaved)
uncooked pasta, any kind
lots of fresh basil
fresh vegetables (I'm using asparagus)
good olive oil - flavor-infused oils work great for this
Cook pasta in boiling, salted water until almost done - add chopped vegetables (asparagus) during last few minutes of cooking and cook until noodles and vegetables are done. Drain.
In a large bowl, toss pasta mixture with olive oil, lots of fresh basil, and parmesan cheese.
Top with diced fresh tomatoes.
And enjoy a delicious, healthy dinner.
